what is eruv tavshilin actually doing, and where does it come from? how does setting aside cooked food before yom tov make it mutar to cook on yom tov for shabbat, what is the logic behind it, and does the food have to be eaten for it to work?

Thank you Rabbi, thank you very much.
Eruv Tavshilin is actually a very good example of how Chazal sometimes built the solution into the prohibition itself.
The Rambam explains it very simply. When Yom Tov falls on Friday, Chazal prohibited cooking on Yom Tov specifically for Shabbat, even though on the Torah level that cooking can be permitted. Their concern was that if people became accustomed to cooking on Yom Tov for another day, they might eventually think it was permitted to cook on Yom Tov for an ordinary weekday as well. So they created Eruv Tavshilin as the permitted mechanism. (Rambam, Hilchot Yom Tov 6:1-2.)
Before Yom Tov you prepare and set aside some food for Shabbat. Now the Shabbat preparation has already begun before Yom Tov. The cooking you do on Friday is viewed as continuing that preparation rather than beginning a completely new preparation on Yom Tov. The Rema in O.C. 527:1 describes it exactly that way: you began before Yom Tov and are now merely completing it.
That is why I often say that when Chazal made rabbinic restrictions, they also frequently built in the “loophole.” That is not cheating the Halachah. That is the Halachah. Eruv Tavshilin is the method Chazal themselves gave you.
The food does not have to be eaten in order for the Eruv to “work.” It has to remain in existence while you are relying on it to prepare for Shabbat. If it is eaten or lost before you have prepared the Shabbat food, you can no longer continue relying on it. Once you have finished the Shabbat preparations, you may eat it. (O.C. 527:15-16.)
So the simple idea is: start the Shabbat food preparation before Yom Tov, leave that food there as the reminder and continuation, and then Chazal permit you to finish preparing for Shabbat on Yom Tov.
