Can I keep cookies or cakes if I know that when I made them, they were never left to sit unworked for 18 minutes between adding water and I putting them in the oven?

It’s not that simple.
It isn’t 18 minutes till it gets into the oven. It’s 18 minutes including baking time.
Also, if there’s yeast in the recipe it’s no good either.
But, technically you are right.
