- Are we allowed to prepare ceviche on Shabbat for consuming that day?
Ceviche is a dish of raw fish marinated in citrus and and seasonings. The lemon “cook” the fish to make it safe to eat. The fish is not cooked inreality but curated.
- Which vegetables do we need to be careful to marinate with lemon as to avoid the appareance of pickling?


ceviche prepared for the same day’s meal is permitted on Shabbat. Although the citrus changes the texture of the fish, this is normal food preparation for immediate consumption and not considered כבישה in the classic sense of pickling or preserving. כבוש כמבושל in halacha mainly relates to long-term soaking and preservation, not ordinary same-day meal preparation.
As for vegetables, one should avoid preparing strong pickling mixtures intended to sit for a long time. However, adding lemon or similar seasonings to vegetables for the upcoming meal in the normal manner of eating would generally not be problematic pickling.
