I have steak knives and larger knives (santoku-style) that all have plastic handles.
How should I kasher them for pesach? Hagalah? I want to avoid melting the plastic.

You can technically just dip the blades in boiling water, although I doubt anything will happen if you drop the whole knife in. Your choice.
