After studying a bit about what would make a flour kosher for Pesach, it seems that for most just guarding it from excessive moisture from when you grind it into flour is good enough to use for all of Pesach while others believe it’s good enough for use for most of Pesach, excluding the first day (two days for diaspora).

Some believe that the whole Pesach one can only use flour that was guarded going back to from when the berries were actually being harvested.

So would i be correct in saying i can buy any wheat or spelt berries and any other subtypes such as Khorasan/Kamut, Einkorn, Emmer, Rye and Barley in berry form and then grind it into flour with any grain mill available whether a manual or electrical one for home use or even at a commercial facility and  use it to make matzah?

Also, am i understanding everything else correctly?
