Another question on P products- I read that much of the citric acids in foods (such as tomato paste and tomato sauce) is derived from corn which is kitniyot—although I eat peanuts based on my fathers costumes, we dont eat corn- is that still an issue with citric acid?

Kitniyot are rendered irrelevant if under 50% (Batel BeRov). So not a problem at all.
