rabbi, a hechsher question. every package today has a symbol, OU, OK, star k, a whole industry. but where does that come from halachically?

1. business or halacha. is kosher certification a halachic requirement or a service industry? where does the Torah or shulchan aruch say factory food needs a symbol from an agency?
2. back in the day. before agencies existed, what did people actually do? they ate what they cooked, bought meat from a butcher they knew, checked what was in things. shulchan aruch yoreh deah 119 talks about relying on the word of a jew who keeps kosher, and 118 talks about seals on food sent through others. is the OU basically that same system scaled up for factories, or is it something new?
3. the trust question. halacha runs on trusting one reliable person’s word about what is in the food. a mashgiach today is paid by the company he watches. does that payment setup hurt the trust, or is a salary fine because a worker is allowed to be paid?
4. the ingredients route. if someone can read an ingredient list and knows what to look for, does a plain product with nothing problematic in it still need a symbol at all? or is the symbol only a shortcut for people who do not want to check?
5. who decided. at what point did this become the norm, and was there ever a halachic decision that made agencies the standard, or did the community just adopt it because factories got complicated?

bottom line, is the hechsher system a halacha with a mekor or a business that grew around halacha, and is checking it yourself still a real option?
