Is blue cheese one of the cheeses which is “under a rabbinical ruling (gezera) to require supervision”?
Also, do you have to wait 5.5/6 hours after eating blue cheese to eat meat?

Blue Cheese is probably included in that gezera.
You do not need to wait 6 hours however.
