It depends how far down the chain the alcohol is in the final product. In the case of this vanilla extract, it’s fine.

Even if the alcohol used in the extract is made from wheat, the actual wheat content is extremely minimal—first, because it’s fully fermented into alcohol (which changes its status halachically and/or it is only a small volume in the alcohol), and second, because the amount of alcohol in the final product is itself very small. So even if there were a chametz concern at the source, by the time it gets to this product, it is batel (nullified) halachically.

Therefore, there’s no issue with using this vanilla extract.
