Cheese without hechsher |

I've read that cheese can be kosher without a hechsher if the ingredients are good? Would that be the case for these cheeses (as organic AND kosher cheeses are hard to come by)?
1. Organic valley AMerican single slices: Organic pasteurized cultured milk, salt, organic annatto, microbial enzymes. Contains microbial vegetarian rennet.
2. Organic valley mozzarella cheese: Organic Cultured Pasteurized Part Skim Milk, Salt, Enzymes.
3. Organic valley meunster cheese: Organic Cultured Pasteurized Milk, Salt, Enzymes, Organic Annatto. Contains no animal rennet.
Also, I believe it was on the list that Lakewood Organic juices were kosher for pesach but I have never seen a hechsher on any. Are they in fact kosher and okay to buy? Thank you!

Hard cheeses need a heshsher.
Soft cheeses like the Mozzarella do not need a Hechsher, but you need to confirm all the ingredients are good. The Mozzarella above is good.
Why would juices need a Hechsher?! I'm confused. Please explain.
